Sprouts are a type of food that provides many nutrients beneficial for health, especially for young children. Since sprouts contain a lot of nutrients such as protein, vitamins, carbohydrates, and minerals, they are very effective in supporting children's digestive systems and are great for the health of their skin. But, are sprouts truly beneficial for children's health?

1. What are sprouts?

   Sprouts are young plants that have a nutrient content five times higher than regular vegetables. They are newly germinated plants, typically harvested 5 to 7 days after sowing seeds. Sprouts are easy to grow and are often cultivated from various types of radishes, such as: radish, sweet cabbage, bok choy, amaranth, water spinach, onions, green beans, or red beans. There are two types of sprouts:

  • White sprouts: Seeds that grow in shady conditions without sunlight, resulting in white stems and slightly yellow leaves. Common examples include green bean sprouts and soybean sprouts.
  • Green sprouts: Seeds that grow in well-ventilated areas with plenty of sunlight, resulting in stems that are whitish-green and green leaves, such as various types of greens like bok choy and certain legumes.

2. What are the health benefits of sprouts for young children?

   Sprouts are a type of young plant with a nutrient content much higher than regular vegetables, providing children with numerous benefits from consuming them:

  • Reduces the risk of dangerous diseases like heart disease in children, protecting them against obesity and high blood pressure.
  • Beneficial for skin health: Sprouts are rich in vitamins C, A, and glucoraphanin, especially in broccoli sprouts, which helps keep a child's skin smooth and healthy.
  • Provides children with a rich source of energy for play and activities.
  • Supports digestion: Sprouts are rich in enzymes beneficial for the digestive system, helping to avoid issues such as bloating, indigestion, and constipation.
  • Nutrient-rich: Sprouts are packed with essential vitamins and minerals needed for health, including potassium, calcium, magnesium, iron, copper, and zinc.
  • Sprouts can help prevent many diseases such as diabetes, infections, cancer, respiratory diseases, arthritis, and various inflammatory issues due to their high antioxidant content. Additionally, they help boost children's immunity.

3. How should children eat sprouts reasonably?

   While sprouts are highly nutritious, some precautions should be taken when introducing them to children's diets:

  • Buy sprouts from reputable sources that ensure food safety, excluding the risk of bacterial contamination or unsafe growing practices using poor-quality soil, fertilizers, and improper storage.
  • Rinse thoroughly under running water (at least three times).
  • Wash carefully to avoid crushing the sprouts and losing nutrients.
  • Soak in dilute saltwater for about 10-15 minutes before preparation for safety.
  • Absolutely do not give children raw sprouts, as their digestive systems are still weak; they could experience digestive issues.
  • For young children, it is best to puree them or cook them in porridge for weaning, and ensure they are cooked.
  • For older children, they can eat them directly once cooked.
  • To ensure a continuous supply of safe sprouts, you can grow them easily at home since they are simple to cultivate and can be harvested within 5 days.

4. Some drawbacks of eating sprouts

 Most sprouts are grown in warm environments with sunlight, which is an opportunity for bacterial growth. If the care of the sprouts is not done safely, they can become contaminated.

Sprouts can also be contaminated due to improper storage. Additionally, the use of fertilizers to increase yield poses a risk of poisoning.

Eating sprouts can cause poisoning due to the biological characteristics of the seeds. Studies have shown that alkaloid solanine is a toxin found in potato sprouts and certain types of melons. Poisoning with this toxin can lead to symptoms such as nausea, diarrhea, headaches, chest tightness, and in severe cases, it can be life-threatening.

It is advisable to consume only those sprout varieties proven safe for consumption, such as white radish sprouts, soybean sprouts, peanut sprouts, broccoli sprouts, and water spinach sprouts.

Avoid eating sprouts from certain legumes like cowpeas, dog peas, pigeon peas. These contain high amounts of glucosidic compounds that produce cyanide - a deadly toxin, similar to that found in bamboo shoots and cassava.

5. How to grow safe and hygienic sprouts at home

  To grow sprouts, you need to prepare the following materials:  

  • Quality seeds such as white radish, sweet cabbage, green cabbage, water spinach, amaranth, etc.  
  • Fertile soil or coconut coir  
  • Planting trays that can be plastic or foam boxes
  • A watering can with a misting mode  

How to Grow Sprouts  

Step 1: Soak the Sprout Seeds  
Wash the seeds thoroughly with water several times, then soak them in warm water (45 – 50°C) for about 2 to 5 hours (depending on whether the seeds have shells, the soaking time may vary). After that, take the seeds out and let them drain.  

Step 2: Sow the Sprout Seeds  
Evenly spread the seeds over the surface of the soil. The spacing between the seeds depends on the type of seeds or according to the directions on the packaging. Then, water them and cover the tray's surface with a piece of cardboard for 2 days.  

Step 3: Care for the Sprouts  
After about 2 to 3 days, when the seeds have sprouted evenly, move the tray to a place with plenty of sunlight. Use the spray can to water them twice a day: once in the early morning and once in the cool afternoon.  

Step 4: Harvest the Sprouts  
Use a knife or scissors to cut close to the base of the sprout if you want to harvest again later, or pull the sprouts out of the soil and cut off the roots with scissors. Rinse them with clean water and they can be used immediately after cooking.  

Note: If the sprouts are not used immediately, after harvesting, there’s no need to wash them; just put them in a bag or container and store them in the refrigerator. They can be stored for 3 to 5 days.
